Cheesy Bacon & Beef Carnivore Casserole

This cheesy carnivore casserole is loaded with bacon, beef, and protein-packed goodness—perfect for low-carb dinners or meal prep. It’s hearty, satisfying, and easy to make in one pan and one baking dish!

Ingredients
  

  • 12 oz bacon cut into bite-sized pieces
  • 2 lbs ground beef
  • 1 tbsp hamburger seasoning optional, or use salt & pepper to taste
  • 3 large eggs scrambled
  • 2 cups (8 oz) cheddar cheese shredded and divided
  • 1/2 cup heavy cream
  • Salt & pepper to taste (if not using a seasoning blend)

Instructions
 

  • Preheat oven to 400° and lightly grease a 9x13 casserole dish.
  • Shred cheese and whisk eggs in a mixing bowl.
  • Cut bacon into 3-4 pieces per strip using kitchen scissors.
  • In a large skillet or frying pan, cook bacon and ground beef together over medium-high heat until fully cooked. Drain excess grease. Season to taste.
  • Stir heavy cream and 1 cup shredded cheese into the eggs and mix well.
  • Assemble the casserole by spreading the meat mixture in prepared baking dish. Pour egg mixture over the top. Sprinkle with the remaining cheese.
  • Bake 25-30 minutes until set and bubbly.
  • Serve hot and enjoy!

Notes

  • Want crispier bacon? Cook it separately and sprinkle it over the top of the casserole before baking. You can also try a middle-ground version by mixing half the bacon into the beef and adding the other half on top for a combo of textures.
  • Our favorite seasoning to use is this Hamburger Deluxe seasoning.
  • Feel free to substitute cheddar with a different cheese like Colby Jack, Monterey Jack, or Gouda for a different flavor.
  • This casserole is great for meal prep and reheats well in the microwave or oven. Refrigerate in an airtight container for up to 4 days.
  • Optional pairing: If you're not strictly carnivore, this goes great with a side of garlic cauliflower mash or a simple salad.
