Ingredients
  

  • 2 lbs ground beef
  • 16 oz bacon
  • 3 tomatoes diced
  • 1 1/2 cups avocado mayo
  • 1/2 cup heavy cream
  • 1 tsp salt
  • 1-2 tsp pepper more or less to taste
  • 1 heart of romaine lettuce chopped or a bag of pre-chopped hearts of romaine

Instructions
 

  • Chop the bacon into small pieces and add to a skillet or kettle over medium-high heat. Cook, stirring occasionally, until crispy. Set aside.
  • While the bacon is cooking, dice the tomatoes and chop the romaine lettuce. Set aside.
  • In a mixing bowl, whisk together the avocado mayo, heavy cream, salt, and pepper. Start with 1 teaspoon of pepper and add more to taste. Set aside.
  • In a large skillet, cook the ground beef over medium-high heat until browned. Drain excess grease and return to the skillet over low heat.
  • Stir the mayo sauce into the ground beef until evenly coated. Add the cooked bacon and diced tomatoes. Stir to combine and simmer on low until everything is heated through.
  • Spoon the hot skillet mixture over a bed of chopped romaine and serve immediately. Optional: top with extra tomatoes or a drizzle of hot sauce.
