Creamy BLT Ground Beef Skillet (Easy Low-Carb Dinner Idea)
Looking for a quick and delicious skillet meal that’s packed with flavor? This BLT Ground Beef Skillet is a family favorite in my house! Inspired by classic BLT lettuce wraps, this hearty, creamy dish is a satisfying twist that’s perfect for busy weeknights and low-carb lifestyles.
The Story Behind This Recipe
I love experimenting in the kitchen—any other mamas out there who enjoy trying new recipes? Yes, it can be a risky game, but when a kitchen experiment turns into a victory, it makes all the effort and mess worth it!
This BLT Ground Beef Skillet was one of my happy accidents. One night, as we were enjoying BLT lettuce wraps, I realized I had ground beef planned for the next night’s dinner but no idea how I wanted to prepare it. None of my usual ground beef recipes sounded appealing, and then it hit me—why not combine the flavors we were already enjoying with ground beef?
Instead of just adding beef to a lettuce wrap, I turned it into a creamy skillet meal, and let me tell you, it was a hit! From that night on, this dish became a regular in our dinner rotation.

Equipment You’ll Need
- Large skillet
- Knife and cutting board
- Mixing bowl
- Wooden spoon or spatula
- Pan or kettle for bacon
- Colander (optional, for draining beef)
Ingredients
- 2 lbs ground beef
- 16 oz bacon
- 3 fresh tomatoes on the vine, diced
- 1 ½ cups avocado mayo
- ½ cup heavy cream
- 1 tsp salt
- 1–2 tsp pepper (adjust to taste)
- 1 heart of romaine lettuce, chopped (or a bag of pre-chopped hearts of romaine)

Step-by-Step Instructions
Step 1: Cook the Bacon
Start by chopping the bacon into small, bite-sized pieces. This helps it cook more evenly and saves you time later. In a skillet or kettle over medium-high heat, cook the chopped bacon until it’s crispy and browned, stirring occasionally. Once fully cooked, set the bacon aside on a plate lined with a paper towel to drain excess grease.

Step 2: Prep the Veggies
While the bacon is cooking, go ahead and prep your vegetables. Dice the tomatoes into small pieces and chop the romaine lettuce. Set the lettuce aside for serving later. The tomatoes will be stirred in later with the beef and sauce.

Step 3: Make the Sauce
In a small bowl, whisk together the avocado mayo, heavy cream, salt, and pepper. Start with 1 teaspoon of pepper, taste, and add more if desired. This creamy sauce ties all the BLT flavors together and gives the dish its rich, tangy taste.

Step 4: Brown the Ground Beef
Once the bacon is cooked and veggies are prepped, brown the ground beef in a large skillet over medium-high heat. Break it up with a spoon as it cooks. When it’s fully browned, drain the excess grease and return the skillet to low heat.

Step 5: Combine Everything and Simmer
Stir the creamy sauce into the browned ground beef, making sure it coats the meat evenly. Add the diced tomatoes and cooked bacon into the skillet and stir well to combine. Let the mixture simmer on low heat for a few minutes until everything is heated through and the flavors have blended nicely.

Step 6: Serve It Up
To serve, spoon the hot skillet mixture over a bed of chopped romaine lettuce. The cool crunch of the lettuce pairs perfectly with the warm, savory skillet mix. For an extra kick, feel free to top it off with additional diced tomatoes or a drizzle of hot sauce!

Tips for the Best BLT Ground Beef Skillet

- Meal Prep Friendly: This dish stores well in the fridge for up to 4 days. Just keep the lettuce separate until ready to serve.
