- 2 lbs ground beef
- 1/2 onion chopped (optional - omit for carnivore version)
- 2 packets taco seasoning or 4 tbsp homemade taco seasoning
- 2/3 cup water
- 12 eggs
- 1 cup heavy cream
- 4 oz cream cheese softened
- 2 cups shredded cheddar cheese divided
- Salt to taste optional
Preheat oven to 350° F. Grease a 9x13 casserole dish.
In a large skillet, brown the ground beef over medium heat.
Drain excess grease if needed, then add onions (if using) and cook for 2-3 minutes.
Stir in taco seasoning and 2/3 cup water, simmer briefly to let the flavors combine.
In a large bowl, whisk eggs, heavy cream, softened cream cheese, and half the cheddar cheese.
Stir in the beef mixture until combined, then pour into the casserole dish.
Bake uncovered for 30 minutes, or until eggs are set (toothpick comes out clean).
Sprinkle remaining cheddar on top. Bake 5-7 more minutes, or broil for 1-2 minutes for a golden, crispy top.
Serve hot. Enjoy plain for carnivore, or add toppings like sour cream, salsa, pico de gallo, bacon, olives, jalapeños, or lettuce for keto.
