Easy Keto Taco Casserole with Carnivore Option (Kid-Approved!)

This Easy Keto Taco Casserole is a tried-and-true favorite in our home. I first made it back when we started experimenting with the Carnivore diet, and it quickly became a keeper. Over time, I’ve tweaked it to work for stricter carnivore days (kept plain and simple) and for days we lean more keto (loaded up with toppings and extras).

The best part? This casserole is delicious, flexible, and simple—perfect for busy weeknights when you want something hearty but don’t want to spend hours in the kitchen. Even better, it’s a hit with the kids—my 12-year-old loved it on the first try, and it’s always a win when dinner is something the whole family enjoys.

2. Brown the Beef – In a large skillet over medium heat, cook the ground beef until it’s mostly browned. Drain any excess grease.

4. Mix the Egg Base – In a large mixing bowl, whisk together the eggs, heavy cream, softened cream cheese, and half of the shredded cheddar.

👉🏼 Tip: If your cream cheese is still firm, microwave it for 15–20 seconds to soften. Use a fork to mash it until smooth before mixing it with the eggs, heavy cream, and shredded cheese.
