Easy Keto Taco Casserole with Carnivore Option (Kid-Approved!)
This Easy Keto Taco Casserole is a tried-and-true favorite in our home. I first made it back when we started experimenting with the Carnivore diet, and it quickly became a keeper. Over time, I’ve tweaked it to work for stricter carnivore days (kept plain and simple) and for days we lean more keto (loaded up with toppings and extras).
The best part? This casserole is delicious, flexible, and simple—perfect for busy weeknights when you want something hearty but don’t want to spend hours in the kitchen. Even better, it’s a hit with the kids—my 12-year-old loved it on the first try, and it’s always a win when dinner is something the whole family enjoys.

Equipment You’ll Need
- Large frying pan & spatula (to brown the beef)
- Cutting board & knife (if adding onions or veggies)
- Measuring cups
- Cheese grater & bowl (if shredding your own cheese – highly recommended!)
- Large mixing bowl
- Hand mixer or whisk
- 9×13 casserole dish
Ingredients

- 2 lbs ground beef
- ½ onion, chopped (optional, leave out for carnivore version)
- 2 packets taco seasoning (or 4 Tbsp homemade taco seasoning)
- ⅔ cup water
- 12 eggs
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 2 cups shredded cheddar cheese, divided
- Salt to taste (optional, depending on your taco seasoning)
Step-by-Step: How to Make Easy Keto Taco Casserole
1. Preheat & Prep – Preheat your oven to 350°F. Grease a 9×13 baking dish with butter, ghee, bacon grease, or avocado oil spray.
2. Brown the Beef – In a large skillet over medium heat, cook the ground beef until it’s mostly browned. Drain any excess grease.
👉🏼 Tip: Use 80/20 beef for the best flavor and texture.

3. Add Onions & Seasoning – Stir in the chopped onion (if using) and cook for another 2–3 minutes. Add taco seasoning, ⅔ cup of water, and a pinch of extra salt if needed. Mix well and simmer for 2–3 minutes to let the flavors develop.

4. Mix the Egg Base – In a large mixing bowl, whisk together the eggs, heavy cream, softened cream cheese, and half of the shredded cheddar.
👉🏼 Tip: If your cream cheese is still firm, microwave it for 15–20 seconds to soften. Use a fork to mash it until smooth before mixing it with the eggs, heavy cream, and shredded cheese.

5. Combine & Pour – Add the seasoned beef mixture into the egg mixture and stir until well combined. Pour into your prepared baking dish.

6. Bake – Bake uncovered for 30 minutes, or until the eggs are set (a toothpick inserted into the center should come out clean).
7. Add More Cheese – Sprinkle the remaining cheddar over the top and return to the oven for 5–7 minutes, until melted and bubbly. For extra crispiness, broil for 1–2 minutes.

8. Serve & Customize – Serve hot, either plain (for carnivore) or with toppings like sour cream, salsa, pico de gallo, bacon, black olives, shredded lettuce, jalapeños, or avocado.

Serving Ideas & Variations
- Carnivore Style → Skip the onions and toppings; stick with just beef, eggs, cream, and cheese.
- Spicy Kick → Add diced jalapeños or use pepper jack cheese.
- Make-Ahead Meal → Bake, cool completely, cut into squares, and store in the fridge up to 4 days. Freezes well for up to 2 months.
- Kid-Friendly Twist → Serve with a side of low-carb tortillas or use mild taco seasoning for little taste buds.
